SHEEPHERDER'S BREAD


Note: With this loaf, Anita Mitchell won the bread-baking contest at the National Basque Festival in Elko, Nevada, in 1975. She used a cast-iron Dutch oven, but a nonstick pan makes the bread easier to manage. Bake the loaf up to 1 day ahead and store, covered, at room temperature. Freeze to store longer.
Yield: Makes 1 loaf, about 3 3/4 pounds
Ingredients
1/2 cup (1/4 lb.) butter, margarine, or shortening
1/2 cup sugar
2 1/2 teaspoons salt
2 packages active dry yeast
About 9 1/2 cups all-purpose flour
Salad oil
Preparation
1. In a large bowl, combine 3 cups very hot tap water with butter, sugar, and salt. Stir until butter melts; let cool until warm (110° to 115°). Stir in yeast; cover and set in a warm place until bubbly, about 15 minutes.
2. Add 5 cups of the flour. Beat with a heavy-duty mixer or spoon just until batter is stretchy, 2 to 5 minutes. Mix in enough of the remaining flour, about 3 1/2 cups, to form a stiff dough.
3. To knead with a dough hook, beat on medium speed until dough pulls from side of bowl and no longer feels sticky, about 5 minutes. If required, add more flour, 1 tablespoon at a time.
To knead by hand, scrape dough out onto a floured board and knead until smooth, about 10 minutes, adding flour as required to prevent sticking. Rinse bowl and rub with oil. Return dough to bowl and turn over to coat with oil.
4. Cover bowl with plastic wrap and let dough rise in a warm place until doubled, about 1 1/2 hours.
5. Meanwhile, if using a 5-quart cast-iron Dutch oven, cut a circle of foil to fit bottom of pan; put foil in pan. Rub the foil and sides of pan generously with salad oil. A nonstick pan that is not worn needs no preparation.
6. Knead dough with dough hook or on a floured board to expel air, then form into a smooth ball.
7. Place dough in baking pan. Cover loosely with plastic wrap and let rise in a warm place until almost doubled again, 45 minutes to 1 hour; watch closely so it doesn't rise too much.
8. Bake, uncovered, in a 350° oven until loaf is golden brown and sounds hollow when tapped, 50 to 55 minutes.
9. Remove bread from oven and invert onto a rack (you'll need a helper); remove foil and turn loaf right side up. Cool at least 45 minutes. Serve warm or cool, cut into wedges.

new people #4

Dear Dairy

Bobcat was doing well not well enough to go hunting again so they boys are drinking sugar water I don't really have any it is for my brothers they need it more. One night I went to bed with the boys they wanted to sleep with me so I let them i woke up to snow all over my face the snow was rushing in the wind was blowing all over the place bringing in the snow even more. I ended up having a fever,One day i woke up to a women singing "ah ho weya howeya he" I fell asleep again and the next time i woke up someone was holding my head away from the pillow I felt a wooden spoon touching my lips i swallowed and again i did, The i opened my eyes there was an Indian woman standing over me and put the spoon to my mouth again, But I panicked where are the boys i tried to get out of bed but surly enough they were right by me.Are you better now Kate, Are you all right i asked, Yes we are all right Bobcat is fine too we have had lots to eat since they have came.

The Indian woman said I must eat to I need to get better I have a fever the woman put another wooden spoon to my mouth and this time i didn't like the taste it was stronger. I had fell asleep again and when i woke up there was Ryan sitting at the end of my bed petting bobcat, "Where is Alex and were is the woman that was here" They are out side they will be back soon i am in charge of you Kate Ryan said. I pulled my feet over the side of the bed and Ryan put his own pillow next to me and laied there,I asked what happened you have got to tell me, OK well these men came here and brought us food and you where sick and couldn't talk to them, What men I asked Ryan, Indian men and a women gajijawi my brother struggled to say. When did she come,she was here when we woke up. Where was I? you where sleeping we had tried to wake you but the woman told us you where really sick and not to wake you.

How long have i been sick? About a week Ryan said A week, But gajijawi said you will be better soon and you are getting better she was right. When he was done talking the door flung open, My brothers repaired the roof for you the woman said, Are you feeling better she said, Yes I replied.Thank you I said, But how did you know we were here? Your father, My father he is alive you seen him? Yes and he had a fever and told us about you when he could peek again, How is he now? He is a lot better. The next day in the middle of the day I was watching outside and then the door swung open and there was a tall dark man and behind him was a small lady with a brown cloak on with a woolen scarf it was grandma Shaw. They brought us some fresh meat, Thank you. we were all worried about you when we herd about your condition Grandma shaw said,After i finished writing a response to Sarah's letter, Alex and Ryan were hurrying me outside and took me to their surprise. They led me into the forest and to a big fire. Right there in a big pot was maple syrup! I've never seen Alex and Ryan so happy in a long time. We were eating maple syrup for days. Several days later, Father came home. I was happy to see him but i stayed back with Gajijawi. But when i went to help with dinner, Father was laughing with Desagonsyne and Towi, and he was hugging Ryan and tousling Alex's hair. But not once did he look at me. but at last he looked up at me kate he said you are looking well, Grandma shaw and Gajijawi took very good care of me. Thank god it is over father said, Gajijawi came here a 7 am today and we have already eaten and i am now drying dishes where are the boys i asked father he said that they went to the sugar bush, Kate Kate the boys shouted shhhh father had a bad morning, My brothers had brought me some taffy. Thanks boys it look very good only one peice boys and i think you have had alot of it in the sugar bush i brought them to the fire and told them a story.


Father fianally woke up athanks for your help gajijawi ill pay you for you'r servises when our supplies come up from Adolphustown father said, I need no pay i am more then happy to watch kate i liked being with the boys and grandma shaw and kate I will be back tomorrow. That is not necessary Father said and he told her that i was well now and i could start doing work again and that he is sending grandma shaw home when towi goes that way Gajijawi asked me if that was alright and i said not at all. but i insisted that gajijawi came tomorrow to help with the washing, before dad could say anything gajijawi said she would come and then father gave me a really mean look, Get the boys ready for bed father said to me. The next day my father put his head up and asked what i was doing and the tea should have been done long ago. So I poured the tea in a cup for father, I was wearing my mothers shawl and he asked if it was mothers and I said yes it is he told me to take it off and bobcat meowed and i told bobcat not now and father got mad and said what is that cat doing in here i forgot that father didnt want the cat in this house. Father chased the cat around the house bobcat tried to jump to the beam that he used to jump to put his leg fell and he fell on my bed so i stood in front of bobcat and said this cat saved our lifes, He hunted for us if he didnt we would have been dead right now, Bobcat i part of this family now if he leavs i leave too. Where would you go? I would go with grandma shaw, The shaws would send you right back, Then i will go with gajijawi. Grandma shaw had breakfast ready when my brothers and I opend our eyes.This porridge is good. today was the day that we went to go get water Grandma shaw made some tea poured father a cup and he said that it was good so bobcat is allowed in my house now adn father does not mind at all. finally bobcat was at the door and father said to let him in he is family now.

hunting#3

Dear Dairy

One night bobcat went to the door he was waiting to go out side it was too late but i had to let him out he wanted out so bad, so I let him out and he stayed out side all night i was kinda worried for him. The next day bobcat came back with a rabbit, the rabbit was kinda small but it still would be good.So I skinned the rabbit and cooked some over the fire for dinner then I boiled some to save. Bobcat went back out side to go hunt again the snow was deeper, It has been two weeks now and bobcat has not returned I was getting really worried.

One day my brothers and I went to go shovel a path, Alex wanted to shovel so I let him and I took Ryan inside I turned around to see what Alex was doing and then right there was a big snow pile on top of him he was covered from head to toe his mitt was sticking out of the snow, I tried to pull but the mitt fell off his hand and so I started to dig I got him out and took him inside. Ryan and I stared to take off Alex's clothing to change him I put both of them by the fire, Ryan and Alex both fell asleep. I had to go out to dig for bobcat to get home, what was I thinking he could jump over my house so he would be able to jump that snow pile.

so i went to go shovel a little and I looked straight ahead and saw a black fur ball lying in the snow bobcat I yelled. I rushed over there to see what it was maybe it was a raccoon lying there but it was bobcat laying there hurt, I went over to him to see if her was alive i knelt down by him and he meowed. It looked like he got attacked his leg was all ripped up. I rushed him to the door and tapped the door with my boot i forgot i left the boys sleeping by the fire then i tapped again and then the door swung open, there was Ryan. I put bobcat down by the fire and left him alone for the night. In the morning i went to check up on bobcat Ryan was the first up i started to boil some water to wash bobcats wounds i added some salt, I started to wash his each wound slowly, His leg wound opened and started to bleed but i dabbed it lightly and it stopped. The boys tried to give him some bark water and some meat but bobcat would not eat or drink it.

dear diary

my dad has left hunting again and he has not been here for a couple of days now and I am worried we are down to the last of our grains to make more bread and when it comes down to it we will have to drink sugar water. the boys sat there eating their porridge, "I wish we had some milk"said Ryan, here the i put some melted snow "lets pretend it is milk. The next day i woke up to the hissing fire", Kate lets pretend ill be the loin and chase you around the cabin. Yeah Ryan was eager now, but i couldn't i was busy making the last of the bread.


I want to be a ferice lion Alex said then bobcat replied with a meow he always had a nice loud meow but this time he sounded scared, Now look what you have done you have scared our cat, Hiss Alex said running towards the cat waving his arms, He can be a mean cat he hit me before. No Alex Bobcat faced him the looked back at the door, so I let him out side after we are done eating we can go out side and play, But first you must help me with the washing. It was a long day the boys were having fun.

Then one day I went to get bark from a pine tree I collected a bucket full of tree bark I was on my way back and when I was heading to the cabin there was bones sticking out of the ground around back of the cabin the there out of the woods a wolf came out we stared into each others eyes then the wolfs teeth were showing i was ready to scream the Alex was in the window looking at me scared i knew i had to get in the house so i started to run i knew i would not be able to get away of the wolf but i did i was banging on the door the opened it and i ran in and shut the door and locked the deadbolt. Kate was that a wolf i am really scared i want father.

Men
• They chopped the wood for the fire.

• They would make some of the tools themselves, Ex: Rake.
• Men hunt for there food most of the time they do not catch a lot of food for the family.
• Men fished for food.

Women
• They did all of the cooking in the house
• They did all of the cleaning
• Fetching water the have to walk 5 miles some times to get some water.
• Making clothing, table cloths, blankets.
• They had to wash all of the clothing.
• They had to make candles sometimes too.
• They had to garden.
• They took care of there children.
• They had to help with the farming.
• Make the children dolls.

• The children helped there mother with the washing
